Waldorf Salad

Waldorf Salad, diet secret of New Yorkers since the Belle Epoque

Developed at the end of the 19th century in the kitchen of the famous Waldorf Astoria Hotel by the maitre d’hotel, Oscar Tschirky.  His original recipe contained only apples and celery with mayonnaise (not out of a bottle – they made their own in those days).  He later published a book of recipes called The Cook Book by Oscar of the Waldorf, still available for cookbook collectors.

Noone quite knows when walnuts were added to the recipe but they provide a nutritious and tasty supplement.   These days other forms of protein are sometimes added, such as chicken, turkey and blue cheese.  Raisins and grapes are also popular additions.

Waldorf Salad Recipe
1 green apple, cored and cubed
1 red apple, cored and cubed
½ – 1 cup celery, thinly sliced
½ cup walnuts (may be lightly toasted)
1 tablespoon level juice
salt and pepper
¼ good mayonnaise (preferably homemade with the highest quality organic oil)Toss apple pieces in lemon juice.  Add remaining ingredients.  Serve on a bed of salad greens.Hint:  use organic apples if possible.  Apple peel contains ursolic acid, which preserves muscle in ageing people.  Better to have the peel without the wax used by the food industry to make apples last way too long.
